Yamagata Yonezawa's local flavors are carefully prepared with the speciality Yonezawa carp, beef, and seasonal vegetables.
In spring, wild vegetable dishes are served, in summer, locally grown vegetables and fruits are served, and in autumn, Yamagata's specialty stewed potatoes and other mountain delicacies are served.
In winter, we serve seasonal dishes that will warm your body.

It is said that the tradition began when the 9th lord of the Uesugi domain, Uesugi Harunori (Yozan), ordered young fish from Soma, Fukushima Prefecture, and raised them in the moat of Yonezawa Castle to meet his protein needs.
Yonezawa carp are raised for three years in the pure, abundant water of the snow country upstream of the Mogami River, and are popular for their firm, high-quality meat with no muddy smell at all. Please enjoy our historic carp dishes.

The Otaru River, the source of the Mogami River that flows through Shirabu Onsen, is a clear stream that continues to be filled with meltwater until summer.

A gorgeous fragrance and full-bodied sweetness and umami. A Daiginjo made from Yamadanishiki rice highly polished to 35%.

Fukutsuru / Gazanryu Myotsuki Daiginjo
A full-bodied, elegant aroma and smooth finish, this Daiginjo is a drink you'll never tire of.

Koume/junmai Koume Junmai
It's a refreshing and clean sake with a dry taste that will have you drinking more and more.
